WHOLEMEAL BANANA MUFFINS

  • 3 Bananas (ripe)
  • 1 egg
  • 1 Tbsp Vanilla Essence
  • 3 Tbsp brown sugar
  • 1 Tsp cinnamon
  • 1 1/2 cups wholemeal flour
  • 1 Tsp baking powder
  • 1 Tsp baking soda
  • 1/2 Tsp salt
  • 2 Tbsp coconut oil (melted)

Grease or line a standard muffin pan (12-muffins) & preheat the oven to 180 degrees C.

Mash banana’s in a mixing bowl and add egg, vanilla, brown sugar and cinnamon. Stir well to combine.

In another bowl, mix together flour , baking soda, baking powder and salt. Mix the two mixtures together – just to combine.

Gently stir in the melted coconut oil making sure not to over mix.

Spoon evenly into prepared tins and bake for 18-22 minutes.
